Convenience food

One of the things I really struggle with when I’m back in Cymru with the van is the food shopping. My default setting is to just stock up at a local supermarket. This is strange to me because when the children were younger I was part of a CSA (community supported agriculture), or at the very least ordered a weekly organic veg box. My work with Slow Towns (Cittaslow) was also rooted in the Slow Food movement and I loved sourcing local food.

Does anybody else find that when they begin to make intentional changes in their life they can only handle so many at a time? It’s almost as if there’s only so many things my psyche can get to grips with… when I begin to integrate something new, perhaps a morning routine, a new sport (like surfing), or just making more time to keep in touch with people, something else has to give – for a time at least.

So perhaps this post is about just giving myself a break. In this case Covid has changed an infinite number of things and so I find I just want to go into one supermarket buy everything and leave. I know this isn’t supportive of local producers, but I am also only one human being and so I buy local when I can. I don’t mean physically, I mean when I can just get my shit together long enough to plan this sort of thing, and I’ll also remember to celebrate all the things I do manage each week.

Anyway – I’ve also eaten way more vegan convenience food that usual on the trip back, and some of it’s pretty tasty. This creamy spread made from coconut oil is a new favourite of ours (I usually have hummus instead of cheese but hey! Let’s go crazy).

Pic 1 it’s topped with a winter salad of grated beetroot, carrot, fresh ginger, with sesame oil & cider vinegar, topped with sesame seeds.
Pic 2 it’s topped with leftover Xmas cranberry sauce.
Both are pretty delicious. And dead easy. Which is where I’m at right now.
