Here’s a weekend treat you can put together in no time but that is rich and delicious. No-bake chocolate peanut butter balls. Gluten free. Can be vegan if you sub honey for liquid sugar like maple syrup or agave syrup. In a bowl put two large heaped tablespoons of peanut butter (you could use other nut butters and I’ve also made a batch with 1/2 peanut butter & 1/2 tahini because we ran out of PB and I couldn’t be bothered going to the shop), add 1tbsp honey, 1tsp cacao powder, handful of finely chopped dried dates or figs, pinch salt. Beat together until makes a doughy mixture. Take a teaspoon of the mix out at a time roll into a ball (wet hands works best) then roll in desiccated coconut on a plate. Chill for at least an hour to firm them up before eating. Makes about 10. Honestly these are my new favourite things. Yum.
