Eat in to help out

It’s been one of those days that has made me take stock and feel a deep gratitude for the accident of birth that made us born in a country that is relatively politically stable, and that isn’t being bombed.

Even today, when things had gone wrong with the van doors and we spent the day freezing getting it all fixed, I felt acutely aware that we still have family who have land we can park on while doing repairs, and who’re able to give us a mains hook-up and water-on-tap.

Even though everything we own in the world is in our van, it’s still enough for us to live a very comfortable life. Nobody is coming to bomb or trash our homes, or beat us because we have the wrong passport (or no passport) and so ‘don’t belong’.

Anyways – it’s Xmas, the season of goodwill and so we decided to take up the @eatintohelpout challenge, make a delicious meal at home and donate what we’d have spent on a similar meal out to @refugeecommunitykitchen

We made vegan tapasy-type things for main:
winter salad of fresh grated beetroot, carrot & ginger; spicy pan roasted chickpeas; crispy kale; cumin spiced sweetcorn, + hummus.

For dessert (it’s winter and we always have dessert when we eat out):
Rhubarb & apple compot spiced with cardamom, cloves & cinnamon; with a sweet, crunchy topping of oats, seeds & nuts made by @andyrgarside ?
Oatley custard on top. Yum.

A mug each of steaming, sweet, oatmilk chai afterwards too.

£40 should cover it. Now to watch movies all evening in our heated van and relax. Which is another luxury I feel very grateful for.
