Still working at being a vegan

I’ve been a very good vegetarian lately but a terrible vegan. Have to get back into the habit of making interesting vegan food. If you follow this account you’ll know how much I love cauliflower tumbled in spices and pan roasted. Was a bit braver with the spices today and it paid off: cinnamon, cloves, cardamom, cumin, coriander, black pepper, paprika, chilli powder, salt. When cooked slathered it in homemade baba ganoush: put a whole aubergine in an iron pan with lid on over high heat, turning occasionally until insides are mushy; scoop out middle, cool, mix with tahini, lemon, garlic, salt. Then add pomegranate seeds, salted peanuts, parsley and serve on curly lettuce. I made the baba ganoush a few days ago so just had the last of it on this – only took 20mins to make this tea.
